Top with half the carrots, then remaining potatoes mixture, then remaining carrots. Cover, bake in moderately slow oven 1 1/2 hours until vegetables are tender. Sprinkle with chives before serving.

Peppered Potatoes and Carrots in sour cream
5 large potatoes, grated
1 onion, grated
5 medium carrots, thinly sliced
2 chicken stock cubes
300ml carton sour cream
125gm packet cream cheese
2 teaspoons canned peppercorn, drained
2 tablespoons chopped chives (herbs kering pu ok)
